Boxborough panel extends burrito shop deadline, unlocks plan funds

Boxborough Economic Development Committee grants Oscar's Burritos a one-meeting extension and clears the way to spend plan funding. The panel voted 4-0 to push the burrito shop's buildout deadline to its February 12 meeting after owner Oscar cited equipment delays and a family emergency; Economic Development Coordinator Alec Wade said Oscar's Burritos expects to open by February 5. Wade also confirmed the town cleared state and MAPC contracting this week, unlocking full funding for its economic development plan, with a kickoff meeting expected before February.
Chair Abby Reip reported the Select Board favors town-led outreach to large employers like AMD and Intel over volunteer efforts, and said she has not yet secured cooperation from the town's Diversity, Equity and Inclusion Committee. A staffer has compiled a 17-business contact list, targeting 20, of firms with 15 or more employees. The committee pays $1,000 a year for MassEcon membership.
